Quick kohl rabi kimchi. Quickchi!

A quick kohl rabi kimchi to go with grilled meats, a bowl of rice or even eggs. I love kimchi but I think I love a quick kimchi even more. Or quickchi?! I like the ones that have ben fermenting away for weeks too, but I love this same day crunchy version made with kohl rabi a little bit better.

I make a paste with the grated ginger, garlic, salt, chili flakes and anchovy sauce. Some like to add a little sugar for balance and some like to add shrimp paste. Variations are endless.
