Apple chutney that packs a punch

With all the entertainment going on around Christmas this quick apple, ginger and rose water chutney is perfect to have ready in the fridge. Great with cold meats, a cheese board or on a cheese sandwich! It only takes 10 minutes to make and a jar of this would make the prefect little home made Christmas present too.

I diced the apples and mixed with the zested orange and its juice, the matchsticked ginger, anise, rose water, the finely chopped scallots and chilli and let is simmer for about 7 minutes until the apples and onions were soft. Salt to taste. Easy peasy! I use quite a lot of ginger and chilli as I like it to really pack a punch. Screen Shot 2015-07-20 at 14.28.35

Ingredients:

  • cooking apples
  • fresh ginger
  • chilli
  • onion, I used banana shallot
  • star anise
  • zest and juice of an orange
  • rose water
  • star anise
  • salt
