Bean and chorizo soup with avocado toast, a warming and comforting lunch for a cold day, like today…
I fried off onions and garlic with chopped up chorizo, then added a tin of tomatoes, smoked paprika and cannellini beans that has been soaked and simmered. For a little more depth I added some chicken stock and let it simmer for half an hour more and topped with fresh oregano before serving. Very few ingredients but so tasty.
We had some lovely sourdough left from the day before and made little avocado, hummus and bresaola toast.
