Chanterelle toast. Chanterelles fried in butter on toast is a favourite in our house! I couldn’t resist buying them in the supermarket the other week. The boys love them and they bring back so many fond Swedish memories for me. They don’t grow in the south of England where we live but at home, in the Swedish forests they are plentiful. Every late summer we pick these and I never forget my middle son’s amazement when one year we stumbled upon a spot where the yellow chanterelles completely covered the ground. – Oh mamma! I’ts like a supermarket, in the woods!
Yellow chanterelles and a red onion fried in butter and olive oil, with a pinch of salt and fresh thyme on your favourite bread – it doesn’t get any better than that! Simple and so tasty! I served these with rocket and parsley from the garden.
You can buy dried chanterelles here. I use these for risottos and gravies and someone said to add them to mash potatoes, I will try that soon.
