I have a version of this chicken broth with courgettes for breakfast at least four times a week. Good morning soups are the best and I am obsessed with them. It just feels so good to start the day with a savoury nutritious soup filled with veg instead of stodgy bread. I love bread too, but not too much of it. I make this soup in so many variations depending on what I have in the cupboards. Right now, courgettes are plentiful, and so are the herbs growing in the garden. For this version I put thin strips of raw courgette, herbs, fresh peas, chilli, raw grated ginger and cornflowers in a bowl and poured over a clear chicken stock that I made the day before.
For dinner or lunch I like to add rice, quinoa or noodles to a soup like this, as well as left over chicken. Or other seafood. Or beef…
The chicken stock was made with onion, carrot, celery, garlic, ginger and three chicken carcasses that had been braised and simmered for 3-4hours.
