This is a summer coleslaw with courgette for my friend Helen! This time of year we always have too many courgettes and I’m forever trying to find new ways of incorporating them in the food and get the kids to eat them. So is Helen! She gave me some of her beautifully grown baby courgettes to challenge me (yet again!) to see what different things I could make with them. Everyone in the family loves coleslaw and the slaws we make tend to change after the seasons and the produce available. So it’s only logical that in summer – we add courgettes to the cabbage, carrots and onions.
If I want all three of my kids to eat slaws I have to make different versions. One child won’t eat it with mayo – so I have to make it with lemon and yoghurt. Another child won’t eat it without mayo so I have to make a version for him, no chilli. A third child prefers it without both mayo and yoghurt and only with olive oil and lemon juice, extra salt + pepper. It’s not unusual in my house that everyone gets a custom made coleslaw bowl, when I’m feeling generous…
This coleslaw was for everyone and whoever didn’t like it could go hungry! It’s got both yoghurt and mayo, lemon, chilli, peas, salt and pepper. As well as courgette! And a small spoonful of freshly grated horseradish.
