Crab and prawn salad

This crab and prawn salad made a perfect lunch over the weekend when we had a heatwave here. Very similar to a prawn cocktail – but with lemon juice and olive oil instead of the Mary rose sauce and a corn flower from the garden. I layered lettuce, avocado, fresh crab meat and dill before topping with big juicy prawns. Yum! This isn’t so much cooking as assembling, but I made a cracking prawn bisque from the shells of the prawns. More about that later. I love dill with seafood, my middle child (who unfortunately is not a great fan of fish at all) says that dill smells of Sweden. I agree, dill always draws my mind to home.

Ingredients:

  • fresh crab
  • fresh prawns
  • lettuce
  • avocado
  • onion
  • olive oil
  • lemon
  • dill
