These cucumber sandwiches are for my friend Helen who grows her own star and love heart shaped cucumbers and so very kindly gave me some to try. Not only were they sweet and absolutely delicious but oh so pretty to look at as well. She challenged me to make as many different things as I could with her cucumbers and fist up was daikon and cucumber on sourdough rye, followed by pesto and cucumber toast.
We used to eat thinly sliced radishes with salt on cracker bread when I was little, this is a version of that. I used daikon radish, a good olive oil and delicious Icelandic berry salt.
