Many years ago, I lived in Málaga for six months. I loved going fruit and veg shopping in the markets and came away with an addiction to Gazpacho. For years after I made it weekly, and then over time I forgot all about gazpacho… or it was overtaken by a new food or a new dish. But in my veggie box this week were sun ripen tomatoes, peppers and cucumbers and my gazpacho memories were awakened again. It’s such a quick, fresh and nutritious dish, perfect for a summer’s day. And it was also perfect to display my friends home grown star shaped cucumbers.
I used a whole punnet of tomatoes instead of passata and blitzed all room temperatured ingredients together and served it straight away. If it had been a really hot day I would have added ice cubes to the soup but this was a regular British semi cold July day…
