This ginger and garlic chicken is a favourite amongst the kids in my house. It’s so quick to make, using very few ingredients. It’s aromatic and savoury – it satisfies everyone in the family.
I used deboned chicken thighs this time and marinated them in soy, grated ginger and garlic for about an hour before frying them in coconut fat. I let the chicken simmer in the marinating liquid for about 15 minutes after frying. I added some thinly sliced raw ginger and seaweed flakes before serving with steamed rice. It’s a winner winner, chicken dinner!
