I don’t like buying processed foods. Making a homemade bbq sauce is easy and you know exactly what’s in it.
Brown off the onions, garlic, chili and tomatoes and add the rest of the ingredients and cook down. By charring the tomatoes and onions in the oven (or on a bbq) you will add more smokiness to the sauce. Mix in a blender until smooth and add salt to taste. If I don’t have time I will use tinned tomatoes.
When it comes to eating there’s nothing worse than undercooked ribs. Stingy and chewy is not how you want them. I like to to slow cook the ribs before they are grilled, to make sure the meat is falling off the bone and tender. I first fry off the ribs in a pan, and add water, onions and garlic and leave this to cook down over a couple of hours. Personally I like to add a star anise to the cooking liquid but this is not a favourite with my kids. If I have fresh fennel I add this too and always somecoriander seeds.
The sauce keps in teh fridge for about a week but I prefer to freeze it, that’s if there’s any left over… which it rarely is.
