Lentil salad with mint and coriander

A lentil salad packed with mint and coriander from the garden. I like to slightly under cook my lentils, leaving a bit of bite. Thinly sliced courgette, radish and red onion add a lovely crunchy texture and I like to pour plenty of olive oil, balsamic and a squeeze of lemon on there too. A quick summer salad for a hot day!

Ingredients:

  • Green lentils
  • Olive oil
  • Balsamic
  • Lemon juice
  • Mint
  • Coriander
  • Baby spinach
  • Crougette
  • Radishes
  • Red onions
  • Pepper
  • Salt
