I wanted to get more flax seeds into my kids and these raw nuts and seed bars with chocolate was the only way I could think of. Well, and there was the fact that I have been meaning to make some of these for ages. I have a husband, the best kind of husband, that fills my cupboards with food from his travels. He travels a lot in his work and before he goes on a trip he will always ask me: – Is there anything you need from Milan? New York? Cape Town? Paris? London? Tokyo? I ask for beef from South Africa and Australia. Cheddar from England. Cheeses and cured meets from France, Italy and Spain. The things he brings back from markets in Spain are unbelievable! He also likes to bring back tonnes of nuts and seeds…
I had some organic flax seed that I blitzed into as fine a powder as my blender would let me. Cashews, almonds, walnuts and pistachios. Finely chopped soft and gooey majol dates for sticky sweetness and finely chopped organic dark minty chocolate. Yum! I thought this would taste all right but I was unprepared for HOW yummy this mixture actually turned out to be! I mixed it together and put it into the freezer for a while so that I could shape it without the chocolate melting. Meanwhile I melted some chocolate and prepared some little sprinkle toppings. Rose petals, finely chopped pistachios, orange zest, coconut and the silky smooth and now melted Lindt chocolate…
I’m not much of a measurement or following a recipe type a person. I like to mix my flavours as I go along. Even the more technical things I like to learn by trial and error. I often have a dish, a colour or a flavour that I want to achieve. This time I wanted a raw ball that wasn’t too dry but the result supriced me! These are delicious!
