Oyster omelette

I had never made or eaten an oyster omelette before but woke up one morning and had a craving for it. I quite like seeing, eating or reading about some new food and then recreate it at home without looking up a recipe, just doing my own interpretation.  I’m still on my honeymoon period for Asian food. Not sure if that’s going to change or not. There’s just something about eating western food over here, it doesn’t seem to taste as good as it used to. Anyway, we always have bok choi or choy sum in the fridge these days so I stemed some in soy and ginger as accompaniment to my oyster omelette. Delicious!

I whisked up two eggs with a tablespoon of good quality oyster sauce and fried in coconut fat for about a minute on each side. Served with the steamed veg and chili salsa. Salty, silky and fragrant. Yum! And so quick to make.

Ingredients:

  • eggs
  • a good quality oyster sauce
  • sesame oil
  • bok choi
  • light soy sauce
  • fresh ginger
