I had never tried raw courgette instead of pasta until today and this is amazingly good! We grow courgettes in the garden and at the allotment and use them in ratatouilles and chargrilled them on the barbie but that was, until today, as far as courgettes went. They aren’t really that tasty and kids have never been a fan. But today it was cold at lunch time and I wanted to cook something warm. Like a pasta dish. But without pasta. I made a quick tomato sauce with garlic, oregano, thyme and basil. And instead of pasta I grated a green courgette. It was delicious and very satisfying, and the kids gobbled it up! Mission accomplished.
