It was one of those days when I had waited too long to make lunch; the soup just took forever to heat up and I had to have something to eat, quickly. The Riverford veg box had arrived earlier that morning. Salty minty cucumbers! It couldn’t be quicker! Large cucumber chunks drizzled with olive oil and lemon, a handful of chopped mint and a pinch of sea salt.
Salty cucumbers always remind me of Sweden. The cucumbers I used here were super fresh, sweet organic ones. I make endless pickled cucumber versions but what hit me when making this was the quickness of it. If I had had crisps or anything like that in the house I would have reached for that, but this is just a much better snack. So delicious, and sooo satisfying!
