Tomato and goats cheese bruschetta

Tomato and goats cheese bruschetta is my son Theo’s idea of heaven. He could eat these all day long and so could I. Sun ripen tomatoes, a squeeze of lemon juice and drizzled with a cold pressed olive oil (that my dad picked up from a farm in Croatia and travelled in his suitcase between many countries before it reached me). And to top it off, a crumble of wonderful goats cheese from Riverford, the best one I have ever tasted. Similar to a feta cheese but creamy and not as salty. Really delicious. I’m playing with the idea of making a cheese cake with it. Making this a staple in my organic box from now on…
