Several varieties of basil is growing in the green house here and I like to use them all as well as the flowers. For lunch a few days a go we served up a simple but tasty tomato pasta and garlic bread. This warmed up our guests that had just come back from a muddy and rainy trek. They liked it so much they had seconds!
Ingredients are sometimes hard to come by when you’re in a new country and shopping in a small mountain village store. I was looking for anchovies but instead, to my surprise later, got a jar of anchovy filled olives! So I used them as well as some capers to salten the tomato sauce.
It’s so quick to make a fresh home made tomato sauce, all you have to do is fry some finely chopped onions, chilli an garlic with capers and olives (normally I would use anchovies here…) add chopped tinned tomatoes and let is cook down for about 20 mintes. Add olive oil and handfuls of basil, mix in with the cooked pasta and top with mozzarella balls and more olive oil!
