Tomato salad and fresh pesto courgette linguini

Sun ripe tomato salad and courgette linguini with home made pesto; my idea of a perfect lunch on a warm sunny day! Clean, fresh and fragrant. The pesto is made from garden grown basil and the courgettes are from the allotment.

It will take the youngest of my kids a little while longer to get used to the crunchy pasta substitute but the pesto they love. It’s great over potatoes too. Or on a piece of bread. I love making fresh pesto and often change it slightly and add other herbs. If I don’t have pine nuts I use walnuts or almonds. I mostly leave out the parmesan but it does taste good…

  • tomatoes
  • olive oil
  • red onion
  • fresh thyme
  • fresh basil
  • courgette
  • salt & pepper
  • for the pesto:
  • garlic
  • basil
  • olive oil
  • pine nuts
  • salt & pepper
