Veggie Monday, what on earth got into us? No, we have consciously been trying to eat less meat for the past year and a better quality organic meat when we do eat meat. Past Monday I just played about with whatever was in the fridge on the Monday after a busy weekend with guests.
I managed to rustle up a potato salad, roasted carrots and parsnips, crisped up garlic kale with barberries, asian style soy sautéed mushrooms and pak choi,hummus, a guacamole, steamed broccoli and asparagus. There, we got Asian, Eastern, Mexican and European. Neesless to say – it didn’t go particularly well together! But it was a no fuss, meat free Monday after a weekend of indulgence, so it left us full and satisfied enough. I wanted many different textures – and indeed we got that. The most interesting thing I find now is that the kids don’t even notice anymore when there’s no meat on the table.
