Vietnamese oysters

We had these Vietnamese oysters at the Hawksmore in Knightsbridge lasts year and couldn’t wait to get home to try to recreate them. They are my favourite way to eat oysters at the moment. We’ve eaten so many that even I have gotten opening them down to a T. The best tool is the humble screw driver it turns out!

Just before serving I top the oysters in a Vietnamesse inspired dressing with fish sauce, soya sauce, lime juice, honey, ginger, chilli, garlic and sesame seeds, fresh coriander and crisp fried shallots.
