Weekend breakfast sandwiches, something for everyone! I love when it, at first, appears to be nothing in the fridge and cupboards on a Saturday morning – you can still rustle up some good breakfast sandwiches when you start moving jars and packets around.
My personal favourite, as well as Theo’s, was the blueberry jam with crumbly goats cheese and blueberry salt. The scramble egg sandwiches with coconut milk and coconut fat went down well with the littlest of the family. Middle child preferred the simple version of only butter and himalayan salt and daddy scoffed down all the olive oil, lettuce, tomato and goats cheese ones. Oh, and there were cream cheese and herb ones too but they were no ones favourite… The delicious goats cheese was from Riverford.
